Domaine Chavy-Martin, Puligny-Montrachet, 1er Cru, 'Les Folatieres'


The Chavy family has been tending the soils of Puligny-Montrachet for almost two centuries. Made famous under their father’s label, Domaine Gerard Chavy et Fils, the two brothers went their separate ways in 2003, and Alain Chavy now crafts his estate wines under the Chavy-Martin banner. Through extremely traditional winemaking practices, including limited intervention and low new oak usage, Alain captures a riveting sense of place from his impressive holdings.
 
This example hails from the Premier Cru ‘Les Folatières,’ which is the steepest of his 1er Crus, situated on the prime mid-slope just north of Puligny’s cluster of Grand Cru vineyards, it is a limestone rich site of ideal aspect that delivers riveting gout de terroir as well as ideal concentration. This near decade-old white Burgundy is not at all oxidative or tired with a bright future still ahead. Boasting classic, mature Burgundian aromatics of white flowers, cream, white truffle, hazelnut and a touch of white peach, this wine evolves on the palate into a wine of superb minerality, stunning texture, and ideal tension. The pitch-perfect acidity has kept this wine fresh, vibrant and a joy to drink now or down the road. This beauty does not require much air. Simply pull the cork 30-40 minutes prior and enjoy in Burgundy stems at 55 degrees. If you are adding to a collection and want to cellar it longer, in 5-7 years this wine will reach its pinnacle.
