This producer is truly revered by some of the most famous names in Sancerre and for good reason. Vincent and Cosette Pinard meticulously farm the 17 hectares of their centuries-old family estate with entirely organic viticulture in the famed village of Bué, which lies on the western side of the Sancerre. They maintain excessively low yields, resulting in perfect fruit and ample concentration in the glass. This single-vineyard wine hails from the Florès parcel, comprised of Les Caillottes, or stones, that are scattered amidst clay-limestone soils from the Jurassic period. Rooted in this incredible terroir are 27-year-old vines that produce finesse, purity and a precise sense of place.
 
The hand-harvested fruit is transformed into world-class Sancerre with minimal intervention. Although the family’s winemaking facility is state-of-the-art, they continue to craft wines in the traditional way. The fruit goes through a gentle pneumatic press; then the juice is fermented in climate-controlled stainless steel tanks where the wine ages on its fine lees. The result is a classic, concentrated and immensely focused translation of Sancerre that is truly on par with the top examples in the world. This is a beauty you will want to re-experience throughout the year for a price that is an absolute steal compared to the staggering quality found inside the bottle.  
 
The 2014 Domaine Vincent Pinard Florès Sancerre exhibits a highly reflective straw core and moves to green reflections on the rim. The nose awakens the senses with aromatics of grapefruit, lemon verbena, lemon balm, kiwi, passion fruit, lime zest, green peach, and green plums laced with wet thyme, a touch of oyster shells, and crushed limestone. The medium-bodied palate is high in acid, which lends incredible freshness to the concentrated, complex flavors of lemongrass, green peach, gooseberry, passion fruit, lemon, and lime zest over riveting minerality that drives the wild ride through your palate and into the captivating finish. This wine is delightful to consume now but will develop more complex nuances each year. For instant gratification, decant for thirty minutes and serve in Bordeaux stems around cellar temperature between 50-55 degrees. Do not serve this wine too cold or the acid will dominate, and the magnificent aromas will be shy. For a dish as fresh and inspired as the wine itself, prepare with this arugula, goat cheese and farro salad with smoked salmon.
