Grower Champagne Guiborat, Tradition Grand Cru, Extra Brut


The Guiborat Fils Estate dates back to 1885. Richard Fouquet, the fifth-generation steward of the family estate, is currently in charge of historic, boutique enterprise. He shares his vision with his grandmother, now in her mid-90’s, who imparts her wisdom with the passion of a twenty-something. They craft their wines entirely from their holdings in Côte des Blancs villages of Cramant, Chouilly and Mardeuil, and maintain world-class quality from lutte raisonée farming. Their production, derived from five-hectares—the remaining three hectares are sold to the famed Laurent Perrier—results in a tiny amount of top-quality Champagne. They farm entirely by hand with aggressive pruning and low yields, which delivers a wine of ample concentration and immense expression of terroir.
 
Guiborat Fils Estate cellar is located at their home on the outskirts of the grand cru village of Cramant and is carved into ancient Cramant chalk. Following manual harvest, the wine is fermented and aged in stainless steel for 29 months. Derived from 25% reserve wine, the blend consists of 70% Chardonnay and 30% Pinot Meunier. The wine received a small 4.5 grams of dosage and was disgorged in the fall of 2013. The result is a Champagne in which all the stars aligned – boasting weight, concentration, refreshing acidity and focused minerality for the perfect glass of bubbly.
 
The Tradition Extra Brut displays a pale golden straw yellow core with fine bubbles slowly traversing through the center of the viscous nectar. Intense aromas of yellow apple, dried pineapple, brioche, fresh white flowers, honey and stirred lees are wound inside crushed chalk and oyster shell minerality. The wine is dense, near full-bodied for a Champagne and offers a creamy, full texture combined with a long persistent finish of ample concentration and distinct minerality. It is crucial to serve this wine in open-mouthed champagne flutes or even white wine stems as tall, thin champagne flutes do not come close to doing the complex aromatics of this wine justice. A delight at this very moment, this wine can also effortlessly age in your cellar for the next 5-10 years. Although this substantial Champagne can easily begin the evening and pair with any number of appetizers, even simple ones such as potato chips, my personal favorite with a rich and full style like fried chicken- trust me.
