In the high elevation, horseshoe-shaped Montsant mountains that surround and overlook the famous appellation of Priorat lies a separate appellation that only received DO status from the Spanish government in 2000. Since that time, the promising Montsant appellation has grown from 28 to 57 wineries. The windswept vineyards, overlooking the Mediterranean in the far distance, offer ample concentration of flavor with tantalizing freshness. Capable of producing generous yet refreshing examples of Southern Rhone varietals, the Montsant appellation delivers a sensory experience akin to Châteauneuf-du-Pape with more freshness and balance. Today’s example is derived from Antoine Touton’s predominantly older vines rooted in some of the highest elevation parcels in Montsant and farmed with organic and biodynamic methods, creating a wine teeming with life, energy and the pristine fruit that goes along with it.
 
Before Galicia-born Fredi Torres began crafting these wines in the appellation of Montsant, he was a well-known DJ in the European house music scene. Charmed by the vine, he studied viticulture and winemaking in Switzerland then worked in Switzerland, Burgundy, Argentina and South Africa before the lure of Iberia pulled him back to his home roots. He then worked in Priorat at the lauded Clos Mogador and founded Saó del Coster before he came to be enchanted with Antoine Touton’s high elevation, windswept vineyards in Montsant overlooking the vineyards he had previously worked below. Derived from five hectares of older vines, Fredi farms these parcels organically with biodynamic principles, which delivers an unrivaled purity to the fruit that is thriving with life and energy. A non-interventionist in the cellar, Fredi crafts this blend of 75% Grenache, 20% Carignan and 5% mixed whites with only natural yeasts. With very little sulfur upon bottling, this wine is finished without fining or filtration. This is definitely a wine to buy by the case, which can easily be a guilt-free endeavor at this price point.
 
This wine exhibits a nearly opaque dark ruby center with pink and garnet reflections on the rim. Fruit-forward and simultaneously floral, the nose is intense with aromatics of warm, ripe black raspberry, black cherry liqueur, wet fresh flowers, black licorice, damp leather, wet stones and exotic spice. The palate is full-bodied with a purity and density of fruits that mirror the nose with an additional array of rich wild strawberry, freshly picked raspberry and wild black cherry, wrapped in the perfect tension of freshness which evolves into savory flavors, wildflowers, wild herbs and finely crushed stones that drive the lingering finish. Full of lively, organic fruit then balanced with mouthwatering acidity, this wine delivers a near perfect example of this unique appellation. For instant gratification, simply pull the cork, decant for twenty minutes and serve in Burgundy stems at 60 degrees. For an authentic pairing, try this Catalan pork shoulder with dried fruits.

Montsant

The Montsant DO is Priorat’s downslope neighbor in northeastern
Spain, but other than differences in altitude, there isn’t much else to tell their terroirs apart. Both appellations contain some of the world’s greatest old-vine Garnacha (Grenache) in soils of fractured granite and shale known locally as llicorella. It is a Mediterranean climate, with wide diurnal temperature swings.

Penedès

Technically, a wine labeled ‘Cava’ can be produced in several different regions, but Penedès, on Spain’s northern Mediterranean coast, is its
spiritual home. The climate is Mediterranean, the soils a favorable mix of limestone (key in pre-serving acids), sand, and clay, and Cava sparklers are crafted in the traditional ‘Champagne’ method. The traditional grapes used for Cava are Xarel-lo (cha-RAY-yo), Macabeu, and Parellada.

Galicia

Galicia is lusher, colder, wetter, and greener than most of the rest of Spain, especially where wine-growing
is concerned. Viticulture up here is some of the most “heroic” in the world, as vineyards cling to impossibly steep slopes along snaking rivers such as the Miño and
the Sil. The influence of the Atlantic Ocean is profound, often lending wines a salty, “sea spray” character.
