2022 Champagne Cazé Thibaut, "Naturellement" Blanc de Noirs

Ten generations of the Cazé family have worked these slopes in the Marne Valley. Fabien only started bottling under his name in 2013. While the big houses were pushing luxury branding and fashion-world marketing, he went the opposite direction: microscopic production, maniacal vineyard work, and zero pesticides.

The 2022 "Naturellement" comes from limestone and chalk in Châtillon-sur-Marne and Vandières—prime Meunier territory where the grape becomes the star of the show. Each parcel is picked separately, gravity-fed into barrel, fermented cold and slow. Two years on lees, extra-brut dosage, with disgorgement decided by taste, not formula. It’s just masterful.

HOW TO SERVE IT

  • 45-50°F in white wine stems. The aromatics need room to bloom: red apple skin, mandarins, and wildflower honey, riding an electric mineral edge.

  • Drink now through 2027. Perfect with gougères, chicken karaage with a squeeze of lemon, or a composed salad of crab, bitter greens, and avocado.
