2021 Sylvain Dussort, Bourgogne Cote d'Or "Cuvee des Ormes"

Domaine Dussort is a small family estate in Meursault, where Sylvain Dussort has farmed the domaine’s 30 acres for over two decades with minimal intervention, allowing the vines to express the true character of each vineyard site. In the 2021 vintage, this philosophy shines through a Bourgogne Blanc drawn from 50‑year‑old vines planted just below the Meursault lieu‑dits En l’Ormeau and Les Pellans. Each wine is treated differently depending on terroir and vintage, and in the cellar only native yeasts are used; aging takes place with extended lees contact but without batonnage, so the wine gains richness while preserving a firm, mineral spine and site‑specific precision.

The result in 2021 is a Bourgogne Blanc that behaves more like a Meursault than a typical regional appellation bottle: the old vines lend weight and concentration, while the soils contribute a taut, flinty minerality. Extended lees aging without batonnage allows the Chardonnay to build texture and volume without veiling the terroir, and the restrained approach to oak keeps the wine fresh and focused. What you get in glass is a layered, aromatic white with ripe orchard fruit, subtle citrus, and a clean, mineral‑driven finish—complex enough to excite serious Burgophiles while remaining a compelling value by Côte‑de‑Beaune standards.

Why You'll Love It

  • Meursault‑like structure and complexity from 50‑year‑old vines, yet labeled as Bourgogne Blanc.

  • Extended lees contact without batonnage gives richness while preserving a bright, mineral backbone.

  • Tiny production and a site‑driven, low‑intervention approach make this a rare, authentic expression of Meursault‑adjacent terroir.

How to Serve It

  • Decant for about 30 minutes or open the bottle in advance to let the wine open up.

  • Serve in large Burgundy stems at roughly 55–60°F to highlight texture and nuance.

  • Pair with roast chicken, butter‑poached seafood, creamy pasta, or mild to medium‑aged cheeses.
