Named after the Roman god of wine, this rare vintage cuvée is produced only in exceptional years. It showcases the estate's commitment to old-school winemaking: 100% of the base wine is fermented and aged in traditional oak casks (foudres), followed by nearly two decades of cellar aging on its fine lees in bottle before a dry Extra Brut disgorgement.
The 2006 "Cuvée Bacchus" is mature, vinous, and deeply layered. Dominated by Chardonnay alongside Pinot Noir, two decades of development have endowed the wine with profound tertiary complexity: dried apricots, candied orange peel, roasted hazelnuts, white truffle, honeyed brioche, and smoky oak, finished with a creamy, gentle mousse and a long, saline chalk backbone.
