Sommeliers line up for this bottle because it implements a brilliant, risky innovation: the secondary fermentation in the bottle is sparked using the estate's own fermenting sweet Vin de Paille must rather than commercial sugars and yeasts. It is a 100% indigenous, estate-born sparkling wine that defines the term "terroir-driven."
Blending mostly Chardonnay and Pinot Noir with tiny splashes of Poulsard and Trousseau, the Indigène carries an incredibly complex and layered tasting profile. Aromas of honeysuckle, white flowers, and orange zest lead into a rich, fleshy palate accented by orchard fruits, toasted hazelnuts, marmalade, and a touch of sea salt. Despite being completely dry, it possesses an opulent, dessert-like texture and depth that sets it entirely apart.
