La Sirène, Chinon

Pure, unadorned Cabernet Franc from four hectares of organically farmed vineyards is the big story. Victor Rousse set up his small domaine in 2020 and has embraced the natural winemaking ethos is both the vineyards and the cellar. This juicy, tangy, perfumed Cab Franc is fermented on native yeasts over the course of about 15 days and bottled unfined and unfiltered after a brief period of tank aging. A pitch-perfect bistro-style red for pairing with old school dishes like steak au poivre and coq au vin.
