What sets Lamblin apart in today's warming climate is their steadfast commitment to classic Chablis style. While others chase ripeness and weight, they maintain the bright, mineral-driven profile that made Chablis famous. Their winemaking is deliberately modern, but minimal: fermentation in stainless steel tanks (never oak) to preserve the pure expression of terroir, natural malolactic fermentation when needed, and gentle clarification using traditional methods like bentonite clay and diatomaceous earth filtration. Oxidation is avoided at all costs.
Gérard Millet’s Sancerre Blanc is a tightly calibrated expression of the appellation’s calcareous marls and secondary limestone, sourced from sustainably farmed Sauvignon Blanc parcels in the eastern and central sectors of the Sancerre zone. The domaine’s roots trace back to the latter half of the 20th century, when Gérard Millet began assembling vineyards around Bué and Vinon; in the early 2000s the project passed to his son Steve, who has since sharpened the domaine’s focus on precision farming and hyper‑hygienic cellar technique.
Few regions and grape varieties are as synonymous as Vouvray and Chenin Blanc. In this tiny appellation to the northeast of Tours, Chenin reaches its highest highs. In Vouvray, the sometimes rustic Chenin achieves a complexity and breed that places it definitively in the firmament of the world’s most noble whites. That’s thanks largely to the village’s signature tuffeau soil. Tuffeau is a particularly porous and chalky variant of limestone and is quite literally what the appellation is built on. Vines grow on it, cellars are carved into it, even the houses in Vouvray are made from it. The porousness of tuffeau means it drains freely, retaining just as much rainfall and nutrients as the Chenin vines need, while forcing them to struggle and produce small crops of concentrated fruit.
The domaine of Valérie and Christian Beyer is widely considered the finest address in Eguisheim, and this 2022 Pfersigberg represents the pinnacle of their craft. The Pfersigberg Grand Cru site is legendary for its complex limestone soils, which imbue the wine with a profound, savory minerality that you simply won't find in lesser vineyards. The critics have taken notice, with Robert Parker’s Wine Advocate awarding it a stellar 96 points, calling it an "impressive, firmly structured, saline and savory limestone Riesling".
