Rather than blending across sites, the estate bottles several of its top parcels separately, letting each soil type speak for itself.
"Le Paradis," meaning "the paradise," is a steep, south-facing single vineyard set on thin, stony Oxfordian limestone known locally as caillottes. Because the topsoil is so shallow, vine roots are forced deep into the limestone bedrock, and the site's extreme drainage and solar exposure yield a remarkably delicate, floral, and ethereal expression of Sauvignon Blanc. The 2024 was hand-picked, gently pressed, and fermented with native yeasts before aging in large, neutral wooden casks, balancing sun-ripened orchard fruit with vibrant limestone freshness in an aromatic bouquet of white peach, honeysuckle, lemon blossom, and crushed limestone chalk.
