The 2019 draws Cabernet Sauvignon from McLaren Vale, Coonawarra, Barossa Valley, and Padthaway, embracing the distinctly Penfolds philosophy that the greatest wine matters more than the boundaries of any single vineyard. Each region brings something different: plushness from McLaren Vale, earth and structure from Coonawarra, and depth and drive from Barossa. The wine then spends 18 months in 100% new American oak hogsheads. Nothing about the approach is timid, but that is precisely the point. This is Cabernet made in an unmistakably Australian voice.
Blackcurrant and mulberry lead into black olive, violet, graphite, cigar leaf, cedar, roasted spice, and dark chocolate. The palate is immensely concentrated, with layers of dark fruit wrapped around muscular Cabernet tannins and a powerful core of freshness. The new American oak is present, but there is enough fruit, structure, and sheer scale underneath it to carry the wine through decades of development.
The 2019 earned 98 points from Ken Gargett alongside multiple 97-point reviews, and Penfolds gives it a peak drinking window of 2025 through 2050. More importantly, it represents something increasingly rare in fine wine: a great estate completely committed to its own identity. Bin 707 does not try to be Bordeaux or Napa. It is powerful, structured, unapologetically Australian Cabernet, and after more than sixty years, it remains one of the country's reference points.
