Woven by hand into koulouri (basket wreaths) to survive the fierce Aegean winds, this ancient training system gives the cuvée its name. Because these vines grow on their own original rootstocks in a phylloxera-free desert of volcanic ash, this flagship bottling delivers a structural grandeur that makes world-class Cru white Burgundy at this price point a thing of the past.

Pound for pound, this instant classic delivers more profound pleasure and intellectual tension than just about any white wine in our arsenal. Built on a foundation of 90% Assyrtiko flanked by a 10% co-fermented whisper of native Athiri and Aidani, the blend is pure genius, draping soft Mediterranean stone fruit and delicate florals over Assyrtiko's explosive, raw volcanic power. Stylistically, it is a cellar-worthy shapeshifter: it possesses the mouth-watering salinity and smoky, gunflint drive of a top-flight Chablis Premier Cru, combined with the low-pH, electric acidity of a German Grosses Gewächs Riesling. With time in the bottle, it will echo the smoky, textured, crushed-stone marine quality of an Etna Bianco before eventually evolving into the rich, lanolin, and honeyed complexity of an aged Hunter Valley Semillon—all without ever seeing a single kiss of oak.
