2024 Clos Cibonne, Tibouren Rose "Cuvée Spéciale des Vignettes"
A sip of Clos Cibonne rosé is a step back in time 120 years. This vineyard is one of 18 Crus Classés of Côtes de Provence, from a family that played a role in creating the Côtes de Provence AOC in 1973. On windy bluffs overlooking Toulon, near Bandol, fifth-generation winemaker Olivier Deforges and only one other employee craft this wine from 90% Tibouren and 10% Grenache. They raise the wine in 120+ year old foudres under flor, as is done in the Jura and Jerez, imparting savory, exotic aromas and transmitting the sea breeze that the thin-skinned Tibouren requires to thrive.
Cuvée Spéciale des Vignettes comes from Clos Cibonne’s oldest Tibouren vines, a precious 60+ year old-vine selection that captures the grape at its most concentrated and expressive.
Why You’ll Love It
Inimitable goût de terroir: sea breeze, garrigue, citrus peel, and a faint nutty savoriness in perfect balance.
Much more profound and layered than your typical Provençal rosé, real texture and presence on the palate. Old-vine Tibouren gives it a serious collector’s edge
Built to age, this wine can cellar beautifully for the several years.
How to Serve it
Chill, but don’t overchill: around 46°F to 50°F is ideal to let the aromatics and texture open.
Serve in white wine stems, or even Burgundy stems if you want the fullest expression.
Pair alongside roast chicken with olives and herbs, grilled salmon with fennel, bouillabaisse, or pan-seared rouget with lemon and parsley.
