Ask any serious Burgundy drinker to name the finest Premier Cru in Chassagne, and "En Caillerets" will almost certainly lead the conversation. The Morey-Coffinet holding here is legendary, tied directly into the family's deep roots and inherited wisdom. Thibault farms this tiny 0.65-hectare parcel with horse-plowed biodynamics, coaxing out a white Burgundy that leans closer to Puligny-like chalkiness than Chassagne's usual broad-shouldered weight.  

Planted between 1985 and 1990 near the top of a steep, southeast-facing slope, these 40-year-old vines cling to exceptionally stony limestone soils with almost no topsoil. The wine’s mineral tension is jaw-dropping. It opens with pure, quiet authority: yellow orchard fruit, lime zest, and wet flint stone. On the palate, it hits with electric focus, driving salivating salinity and white peach down a long, tightly wound finish.
