Domaine Weinbach, Riesling "Cuvée Théo" Clos de Capucins, Alsace, France

"The Historic Monopole"

The five-hectare Clos de Capucins was planted in the early seventeenth century by Capuchin monks on sandy granite soils and has been farmed biodynamically by the Faller family for generations. Fermented spontaneously in old oak casks and aged for a year, this Riesling is brimming with solar power and prominent fruit, yet singing with tension. Aromas of ripe yellow peach, apricot, white flowers, lime zest, and granitic minerality lead to a palate of golden fruit and a rush of brilliant acidity.

Pair with: Grilled fish, or cellar for a decade and serve with a slow-braised choucroute garnie.


Roger & Christophe Moreux, Sancerre "Les Monts Damnés", Loire Valley, France

"The Damned Mountains"

Les Monts Damnés are steep, rocky slopes so treacherous that tractors cannot reach them, requiring entirely manual labor. Thirty-year-old vines dig into Kimmeridgian limestone on perfect south-facing exposure, and the wine is concrete-fermented for pure site expression. The result is intense chalky salinity, flint strike, and ageworthy structure, with electric citrus, wet stone, and green apple tension throughout.

Vincent Paris names this cuvée for the unforgiving thirty percent granite slopes of Cornas, where he prunes his vines to four bunches per vine for concentration and even ripeness. Made with no added yeast and minimal sulfur, this Syrah is perfumed with boysenberry, violets, freesias, and bacon fat, with the grace and elegance of a wine built for the long haul.

Olivier Jullien was a revolutionary who saw Grand Cru potential in the Languedoc long before the rest of the world caught on. Sourcing from rocky terraces at nine hundred meters on the Larzac plateau, he captures a bracing freshness that heavier southern blends often lack.
