Bourgogne Côte d'Or, introduced in 2017, is reserved for grapes grown within the hillside villages of the Côte de Nuits and Côte de Beaune, leaving out the flatter vineyards of the plain. Arnaud Baillot draws this bottling mainly from parcels near Meursault and Chassagne-Montrachet, farmed organically and picked by hand.
The 2024 fermented spontaneously and aged 10 to 12 months on its fine lees in French oak, about 20% new. It delivers village-level pedigree: Meyer lemon, white peach, toasted hazelnut and white flowers, with a creamy mid-palate and a crisp, saline mineral spine.
