Emiliano Falsini is one of Italy's most acclaimed consulting oenologists, and "Il Debbio" is his personal passion project located in Castagneto Carducci along the Tuscan coast, near Bolgheri. Dedicated entirely to Cabernet Franc, Falsini farms a tiny single parcel rooted in coastal sandy-clay soils. His goal is to craft a pure, low-intervention expression of coastal Tuscan Cabernet Franc that emphasizes varietal elegance, fresh herbal aromatics, and mineral precision over heavy barrel extraction.
The 2022 vintage was hand-harvested and fermented spontaneously with native yeasts in custom terracotta amphorae and open wooden vats. Aged for 12 months split between terracotta amphorae and neutral oak barrels, "Il Debbio" showcases intense varietal character. It exhibits red plums, crushed blackberries, eucalyptus, dried sage, graphite, and cocoa nibs, bound by a silky texture and vibrant coastal acidity.
