While mega-houses source from hundreds of disparate sites, Lallement’s tiny production relies on sustainably farmed, hillside vines rooted in deep chalk and clay soils. Driven by a blend of red-skinned grapes (Pinot Noir and Pinot Meunier) complemented by Chardonnay, this NV cuvée undergoes a generous four to five years of lees aging before disgorgement—a commitment to patience usually reserved for prestige vintage bottlings.
