Forest-Marié, Brut "Tradition," Montagne de Reims
"Tradition"
Thierry and Gracianne Forest-Marié farm across nine generations in Trigny, at the heart of Montagne de Reims, working an unusually fragmented 86 parcels across the villages of Trigny and Ecueil, sustainably and HVE-certified. Their flagship "Tradition" is an equal-thirds blend of Chardonnay, Pinot Noir, and Pinot Meunier, built for consistency rather than any single vintage's fingerprint. Expect a fine, persistent mousse, toasted brioche and lemon-citrus lift, green apple and honeyed pear, all carried by bright, balanced acidity.
Pair with: Roast chicken with morels or cremini mushrooms, jus, and a little cream.
Guy Larmandier, Champagne Brut Zero Grand Cru Cramant Blanc de Blancs
"The Zero-Dosage Purist"
Guy Larmandier founded his estate in 1976, among the first growers to stop selling fruit to the big houses and bottle under his own name; today his widow Colette and daughter Marie-Hélène carry the work forward. Nine hectares, almost entirely Chardonnay, sit exclusively on Premier and Grand Cru ground in the Côte des Blancs, and this cuvée zeroes in on Cramant's Kimmeridgian limestone with not a drop of dosage added. The result is pulverized chalk, sea spray, lemon zest, and white flowers — tense and electric, but never austere.
Pair with: Oysters or other simple raw seafood.
Colin, Cuvée Castille Rosé Brut 1er Cru
"Cuvée Castille"
Champagne Colin has farmed Premier Cru vines in Vertus since 1829. This rosé carries a striking 40% perpetual reserve dating back to 2004, built from 90% Chardonnay and 10% still Pinot Noir off 30–40+ year-old vines. Wild raspberry, blood orange zest, and crushed peonies open into red cherry preserve and a chalky, mineral-driven finish.
Pair with: Duck breast with wild raspberry gastrique.
2016 Lancelot-Royer, Champagne Grand Cru Brut Blanc de Blancs "Millésime"
"The Vintage Powerhouse"
Proprietor Michel Chauvet has his hands on every step at Lancelot-Royer, from harvest to disgorgement, farming 12 hectares of 100% Grand Cru Chardonnay in Cramant on vines averaging 30–40 years old. This rare vintage bottling spent over six years on the lees before its 2023 disgorgement, producing a wine far removed from "light and lemony" — green apple, peach, brioche dough, and crushed stone build into a full, mouth-filling Blanc de Blancs with real backbone.
Pair with: Butter-poached lobster with a light lemon beurre blanc.
