Kabinett Riesling might be the most misunderstood category in fine wine, and bottles like this are exactly why. From Willems-Willems, this is not sweet, simple, or easy—it’s a high-wire act of precision and restraint. Sourced from 70+ year-old vines in the steep, slate-laced slopes of Oberemmler Altenberg, this is Saar Riesling at its most electric: featherweight in body, yet loaded with energy, cut, and mineral intensity.
The Saar is the coldest corner of the Mosel. Ripening comes slowly, acidity stays razor-sharp, and alcohol remains strikingly low. The 2022 Altenberg Kabinett clocks in at just 8.5%, but it carries itself with remarkable authority. Fermented with native yeasts and cropped at low yields, it delivers a crystalline snapshot of place: lime zest, green apple, and white peach layered over crushed slate and a distinctly saline edge. There is residual sugar here, but it reads as structure, not sweetness—driving tension, length, and that unmistakable Kabinett snap.
In a warm vintage like 2022, many producers chased ripeness. Willems-Willems did the opposite, preserving the Saar’s hallmark lift while allowing just enough fruit to make the wine immediately compelling. The result is a Kabinett that feels both classic and finely tuned, bright, incisive, and quietly powerful beneath its weightless frame.
Carolin Willems represents the fifth generation of female winemakers at her family property. After growing up in tune with the estate vineyards, she completed the Viticulture & Enology program at the lauded Geisenheim University. Not being one to rest on her laurels, Carolin continued her studies in Australia and South Africa to expand her already impressive resume. Her mastery of pure, crystalline Riesling is the result; an ability to capture elegance and texture in her wines despite the electric acidity typical of Saar Riesling. Not surprisingly, she has earned accolades in Germany, including “Young Winemaker of the Year” in 2010 and “Best Dry Riesling Under 12.5% Alcohol” in 2013.
This bottle shows off not just the thrilling mineral energy of dry Riesling but the ageability and incredible value it delivers as well.
