For nearly two centuries, the Rougiers have painstakingly maintained Simone’s north-facing, limestone terraces—originally planted by Monks in the 16th century—preserving ancient clones and pre-phylloxera traditions that can neither be replicated nor rushed. The 2022 Palette Blanc represents the pinnacle of ancient-vine white winemaking, carrying forward a centuries-old legacy that has generated a fervent, cult-like fanaticism among collectors. Born from north-facing terraces shaded from the intense Provençal sun, this legendary bottling utilizes indigenous yeasts and a meticulous aging regimen of one year in large oak casks followed by an additional year in older, small barriques.
