2024 Olivier Morin, Chablis

Since 1992, when he left a life in the music industry to take over the family domaine, essentially trading in his turntables for a tractor, Olivier has never looked back. Three decades later, Morin has established himself as one of the region's most quietly serious growers. Since 2020, all vineyards have been farmed organically, officially certified in 2023.

The 2024 vintage shows what real Chablis looks like when nobody's trying to impress anyone. Estate vines average 30 years old and sit in Mont Périer, the hillsides southwest of the village near Courgis, where fine clay mixes with white limestone so dense with fossilized marine life you can pick the shell shapes out by hand — the same Kimmeridgian seam that runs under every great Chablis vineyard. The result tastes like liquid minerals melded with lemon rind and crushed oyster shell: clean, saline, with genuine power beneath the precision.

The wine is fermented and aged in stainless steel tank on indigenous yeasts, left on fine lees for 12 to 18 months. Very little sulfur is added at any step, and the wine is bottled unfiltered. This isn't manipulated wine. It's just honest Chablis from a grower more interested in his soil than his press coverage.
