Champagne Clandestin, “Les Semblables”, Brut Nature

Champagne Clandestin is a new joint project between Bertrand Gautherot of Vouette & Sorbée and his righthand man, the young, energetic, Burgundian-trained Benoit Doussot. Clandestin means hidden or secret and it refers to the source of this Champagne: the long-overlooked, west-facing parcels of Pinot Noir on Kimmeridgian soils as well as Chardonnay on Portlandian soils above Buxières. Gautherot and Doussot were fully committed to organics from the start and have received full ECOCERT certification. Their hard work has paid off in spades. Their “Les Semblables” is a savory Champagne made from 100% Pinot Noir showing a salty minerality dictated by its sourcing. Harvested by hand and fermented by natural yeasts. The multi-vintage blend is fermented and aged in 350- and 500-liter French oak barrels followed by 15 months aging sur latte. It is bottled without a dosage. It doesn’t get more natural than this. Champagne purists will revel in its purity, elegance, and layers of complexity. Exceptionally fine pinpoint bubbles allure you into a creamy, chalk infused textured core. This is not your aperitif styled Champagne, but one to enjoy with a meal that showcases fresh wild mushrooms.

The Loire and its tributaries cover a huge swath of central France, with most of the wine appellations on an east-west stretch at47 degrees north (the same latitude as Burgundy).
