2022 Fèvre-Fèvre, Chablis "Les Preuses" Grand Cru

Many in the trade—and serious Burgundy collectors—see the name Fèvre and immediately think of the legendary Domaine William Fèvre. But the family’s roots in Chablis run deep, dating back to the early 1800s, with several branches producing exceptional wines. The Fèvre-Fèvre label is helmed by Gilles Fèvre (William’s nephew) and his wife Nathalie, formerly head winemaker at La Chablisienne, the region’s leading cooperative.

Today, the couple oversees a 100-acre estate from the village of Fontenay-Pres-Chablis, with holdings that include Grand Cru Les Preuses, 1er Cru Fourchaume, and Mont de Milieu. Even their basic AC Chablis vines are strategically planted on the Côte de Fontenay—prime terroir just northeast of the Grand Cru slopes.

This southwest-facing parcel features deep Kimmeridgian marl and chalk soils, with vines planted between 1950 and 1973. The wine spends 15+ months on fine lees—30% in new oak, the rest in stainless steel—yielding a Grand Cru that’s floral, smoky, and mineral-driven with serious aging potential.

Savvy Chablis buyers gravitate to Les Preuses for its exceptional quality-to-price ratio. In any vintage, more prestigious neighbors like Les Clos or Valmur can run $25–$40 more. This 2022 effort exceeds already-high expectations for Grand Cru Chablis. Aromas of pineapple core, ripe stone fruit, lime blossom, honeysuckle, and fresh cream meld with preserved Meyer lemon peel, crushed oyster shell, and wet chalk. "The 2022 Chablis Les Preuses Grand Cru takes time to open in the glass. There is a patina of new oak that will need to be subsumed, but underneath, there lies some intriguing tropical-tinged fruit and hints of white peach and nectarine, becoming spicier with aeration. The palate is fresh and vibrant on the entry with impressive depth, and the acidity here is beautifully judged. One of the more elegant Les Preuses, I admire its purity and length.
