Francis Boudin hails from a long line of old school vigneron producers that date to 1960. He has stood firm in his traditional winemaking techniques, which results in balanced wines that capture the inimitable terroir of Chablis. The signature Kimmeridgian limestone soils deliver a flavor profile 180-million-years in the making. During the upper Jurassic Age, this area was underwater and what remains today is a composition of limestone, clay and fossilized oyster shells that are delightfully unmistakable and is one of the most stunning examples of terroir’s power in the world. If you were to take a stroll through the rolling vineyards, you would certainly stumble across some sort of seashell on your jaunt. These natural relics of the past are everywhere and what they offer the wine is pure magic.
 
One of the Boudin’s top vineyards, the Premier Cru of Fourchaume, is perched along the right bank of the River Serein just north-west of the Grand Cru vineyards of Chablis. Boudin’s treasured 4.5 hectares of mature vines have a near perfect southern-facing aspect. The result is weight, texture and concentration that few wines below the Grand Cru classification can deliver. After Francis hand picks his fruit, he ferments the juice using only natural yeasts in stainless steel tanks. The wine is then aged entirely in tank, which results in an authentic translation of terroir that is entirely unadulterated by the influence of oak. The finished wine is bottled without fining or filtration and delivers a pure representation of the best Premier Cru Chablis has to offer.
 
The 2014 1er Cru Fourchaume displays a light golden core with green reflections on the rim. Dazzlingly concentrated aromas of white peach, yellow apple and green plums are laced with honeysuckle and various white wildflowers, white button mushrooms, beeswax as well as wet stones and oyster shells. About as concentrated as a Chablis can get, this wine is near full-bodied for the varietal and delivers a slight oiliness and softer acidity, which is layered with concentrated flavors similar to the nose and inimitable oyster shell minerality which lingers for minutes after the wine leaves your palate. This serious wine’s impressive quality and expression are near indescribable and results in a stand out example of all the Chablis we have tasted this year. Decant for 30-45 minutes and serve just a touch warmer, between 55-60 degrees in Burgundy stems, to enjoy the full aromatic display. Serve this treasure alongside sole au vin blanc with mushrooms for an experience of pure nirvana.
