Among Chassagne, Puligny and Meursault, White Burgundy can show varying levels of acid, texture and minerality depending on the vintage and location on the hill. Details like altitude, slope, soil type, and sun exposure can determine the way Chardonnay expresses itself more than the name of the village on the label. The beautiful thing about this particular old vine Meursault from Domaine Buisson-Charles is that it is fully representative of classic Meursault by expressing the strength of terroir from individual vineyard plots in one bottling. This wine is made up of six different plots in Meursault—Meix Chavaux, Pellans, Millerands, Virueils, Vignes Blanches, Marcausse—serious sites spread amongst the hillside that help the wine to achieve a perfect expression of the place. The vines are an impressive 65 to 100 years old and bring a ton of complexity and minerality to the wine. Also aiding the immense quality are the viticulture and winemaking choices made by fourth generation vignerons Catherine Essa Buisson and Patrick Essa; yields are kept low, grapes are hand picked, batonnage is not used, and the oak influence is very minimal (20% new). The resulting wine is rich, pure and balanced with the perfect amount of acidity. This wine is ideal for drinking now or aging for years to come.

The 2012 Meursault Vieilles Vignes from Domaine Buisson-Charles has a lovely light golden yellow core that moves to green reflections on the rim. The nose is classic Meursault—aromas of dried yellow apple, pear, lemon blossoms, melted butter, lees, a touch of honey and oyster shells hover beautifully above the glass. The palate is luscious and round with an abundance of desirable texture, with flavors that match the nose and an ideal amount of freshness drives the long finish. For those of who are patient and can keep the wine in a proper cellar, this wine will show in its greatest form in about 5-10 years from now. Although, if it’s kept well, it could age for even longer. If drinking in its youth, which I highly recommend because it is absolutely delicious right now, decant for thirty minutes and then serve at cellar temperature. This exemplary White Burgundy will peak after about an hour open. Do not serve too cold—it is most enjoyable at about 60 degrees. I recommend pairing this textured, fresh white wine with roasted chicken in a lemon cream sauce.
