Samuel Billaud ‘Les Grands Terroirs’, Chablis

Billaud-Simon is a celebrated family-run domaine founded in 1815. Like most Burgundian estates, it is small, with 20 hectares (about 50 acres) of vineyards scattered across a variety of locales. In Burgundy, where your vines are located matters most; Billaud-Simon’s holdings include parcels in four Grand Cru vineyards (out of seven in Chablis) and four Premier Crus. This exceptional “village” wine—labeled “Chablis,” with no further annotation—is sourced from several well-positioned vineyards just outside the Grand Cru demarcation zone. It is, like most Chablis, aged only in tanks (no oak barrels).


Pale straw-gold in the glass with green reflections. Bright aromas of green and yellow apple, lemon rind, crushed chalk, oyster shells. Taut and quenching, with a sunny kiss of fruit on the mid-palate rushed along on a wave of freshness. Finishes with a salty, stony kick.

The Loire and its tributaries cover a huge swath of central France, with most of the wine appellations on an east-west stretch at47 degrees north (the same latitude as Burgundy).
