In fact, this bottle hasn’t budged one penny since we last offered it, inflation be damned! We were shocked that we could grab a few more bottles, but this is almost certainly your last chance to try this revelatory, rarefied Champagne. As such, he has spent every waking hour over the past two decades ensuring his wines are free of additives. Because he refuses unnatural methods at every step of the process—from eschewing any and all pesticides and herbicides, to banning chaptalization and sulfur during fermentation, to only using gravity to move the wine—Vincent Couche is leading the charge in the biodynamic grower Champagne movement. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan style=\"font-weight: 400;\"\u003eHe is also a man of calculated genius who masterfully blended Buxeuil Pinot Noir and Montgueux Chardonnay, slowly vinified it in French barrels, and then let it develop for 19 years in bottle before disgorgement. Fast forward a little over a century and you come to Richard and Romain’s grandmother, Geneviève Prieur, Constant Piéton’s great-granddaughter. She ran her small estate, selling fruit and producing small amounts of Champagne at the same time as her peer Marie Louis Radet, both pioneering women in an industry dominated by men. As such, Chardonnay is their primary grape, and is the focus of their lineup. However, for the “Les Grandes Terres” vintage wine, they use only fruit from their top parcels of old vines in the Grand Cru villages of Oiry and Cramant. The old vines and their prime terroir bring the power and richness, so Romain and Richard balance that breadth with precise, meticulous winemaking. Fermentation and aging is exclusively in stainless steel and malolactic fermentation is generally blocked. Pull it out of the fridge or ice bath 15-20 minutes before serving so it can come up to a cool temperature of 48-50 degrees, and then serve in either a good all-purpose stem (this is best for a bright, persistent mousse) or a nice Burgundy bowl (to accentuate the aromatics and vinous texture). The initial attack of leesy, brioche aromas quickly give way to layers of lemon curd, yellow apple, lime zest, almond skin, honeysuckle, and chalky, flinty minerality. The super elegant, luxurious mouthfeel has plenty of ripe fruit, but the long, sea salt laden finish feels bone dry. Serve with your favorite shellfish–oysters on the half shell will do nicely, or try the recipe for crab risotto below. A blend of mostly older-vine fruit from top parcels in three of the most lauded Grand Crus of the Côte de Blancs, this gloriously luxurious wine spent a full 12 years aging on the lees and another three post-disgorgement to put it into an impeccable window of pure enjoyment. Nor does it have the movie star, mega yacht appeal of Dom Pérignon or Roederer’s Cristal, but that’s fine by them. This historic Champagne house has always been more concerned with quality and tradition than with hype and celebrity endorsements. Of course they do have their famous fans who like to be “in the know” (looking at you, Bono) but for the most part this house specializes in exquisitely balanced, ethereal wines that emphasize finesse and complexity over flashy opulence. In other words, they make wines for true connoisseurs.\u003c\/span\u003e\u003c\/p\u003e\n\u003cbr\u003e\n\u003cp\u003e\u003cspan style=\"font-weight: 400;\"\u003eThe location of their winery and cellars says it all: While most of the top houses in Champagne are located in the commercial heart of Reims, and the rest like to be near the main drag of Épernay, Billecart is located in Äy, surrounded by vineyards instead of tourists. Their selection of wines includes a classic NV Brut, a.k.a. the “black label,” and their iconic Brut Rosé, whose color mirrors the family name almost perfectly. But their most limited, most exceptional cuvées are named for the founding family members: Nicolas François, Élisabeth Salmon, and Louis Salmon. The 2009 vintage is an especially seductive effort, with the generally warm and sunny vintage providing extra depth and charm. After 12 years(!) of aging in the bottle on the fine lees, and an additional three years of age post disgorgement, this bottle of pure bliss is ready to rock as soon as you pop the cork (gently, please). Serve cool, not cold, in either an all-purpose stem or a Burgundy glass, if you want to emphasize the aromatics and vinous nature, and you’ll immediately notice a persistent, impeccable perlage. Aromas of preserved lemon, yellow apple, marzipan, brioche, cardamom, white pepper, and citrus blossoms all lead to a wonderfully precise, almost impossibly elegant mouth feel. Yes, you heard that right: Gilles is passionate about American Whiskey, especially Bourbon, and for years he has been buying barrels then shipping them to his cellar where they continue aging in the used Ratafia casks. The fruit hails from his best vineyards, where a very thin layer of topsoil sits on a bedrock of pure, chalky limestone. After fermentation and aging in steel tanks (zero oak), the 2009 was bottled and then spent over ten years aging on its fine lees before disgorgement and a miniscule dosage of 2 grams per liter. Serve this monument to precision in an all-purpose stem (preferably of hand-blown glass) at a cool 48 to 50 degrees. The full array of aromatic complexity quickly opens up: White raspberry, peach skin, hazelnut, lemon blossom, candied orange, and wet rock lead to a bright, fruit-forward palate with a tickly, delicate texture and a long, sea salt and mineral-laden finish. Their wines capture the fruit-laden, fleshy stylings that make this Grand Cru village ground zero for Pinot Noir-based Champagne. They’ve been here since 1614, and have for five generations vinified and bottled the fruit they grow. But they’re not just bound to tradition. In 1948, the Coutier family was the very first to plant Chardonnay in the village. It was thought of as a risky decision at the time, but they knew what they were doing. Since then, Chardonnay plantings have risen to almost 20% of the village’s acreage, and increase every year. With ever-warmer vintages, the tension Chardonnay brings has proven essential to the village’s plush stylings. Now headed up by the young Antoine Coutier, the estate continues to push forward, achieving organic certification and moving toward lower sulfur levels in their finished wines. The family only produces the wine in the best years, and 2012 will go down as a landmark for the region. It was a vintage of contrasts. Frost and hail damage converged in spring, reducing yields from the get-go. Then rainy conditions during flowering meant increased disease pressure and even less fruit than expected. But midsummer saw a turnaround; warm, dry, sunny days followed by cool nights made for perfect ripening, and the blessed conditions continued all through harvest. It’s roughly ten hectares, but most of that is simply a lieu-dit with a Pommard villages designation, less than three hectares are designated Premier Cru, and that parcel sits closest to the village, abutting the more recognized “Les Arvelets” Cru. Historically this was at the edge of where grapes could attain perfect ripeness (which is why most of the plot is not Premier Cru) but with a warming climate this is actually prime territory for classic Pommard–velvety, silky, and floral on the attack, but deep, and powerfully structured underneath. This led to a robust, very large crop that was immediately recognized as “excellent.” However, the best producers realized that if they left too much fruit to ripen it would dilute the final wine, and so they practiced green harvests to help concentrate the flavors. This leads me to the next “unicorn” factor for this exceptional wine: scarcity. Only one barrel was made from the 2000 vintage, which is approximately 250 bottles. Turns out that the estate of Jean-Charles Lécuyer was in the process of dissolution at the time, with parcels being sold, and eventually the estate ceased to exist. So the wine sat in the cold, damp cellar where it was born until it was acquired by the esteemed Delauny family, who were our hosts in Burgundy last fall. We tasted the wine and presto, we secured the entire production. Properly cellared, perfectly mature Burgundy is a rare treat, so it’s important to treat it with love–DO NOT just pop and pour this bottle. The first step is to stand it upright (preferably in a spot in your wine fridge or cellar so it maintains a good temperature) for about 24 hours before serving, allowing the sediment to settle naturally. That’s important because you don’t want to decant it, just carefully open the cork (a Durand or Ah-So is recommended) and watch the wine evolve in the glass and bottle over several hours. As you do you’ll be treated to waves of black cherry, kirsch, dried blueberry, dried rose, violet, crushed lavender, worn leather, bitter chocolate, candied orange, forest floor, and a finish that is intoxicatingly feral and chalk full of savory, earthy minerals. You can enjoy this wine on its own, with a simple spread of hard cheeses and cured meats, or with a showstopper like Boeuf en Croûte. In the cellar, the gently pressed juice saw a slow, spontaneous fermentation in older French oak barrels followed by roughly 10 months of maturation. During this time, malolactic fermentation was avoided, but a steady lees-stirring regimen was employed to lend more textural richness.
