2022 Olivier Morin Bourgogne Aligoté

Since 1992, when he left a life in the music industry to take over the family domaine, essentially trading in his turntables for a tractor, Olivier has never looked back. Twenty-nine years later, Morin has established himself as Chitry's standard-bearer. Since 2020, all vineyards have been farmed organically and were officially certified in 2023.

The 2022 vintage showcases what happens when ancient vines meet meticulous farming. These Aligoté Doré vines, now pushing 50 years old, produce tiny yields of intensely concentrated fruit. The soil is plowed to encourage vine roots to dig deep into the region's chalky soils. The result tastes like liquid minerals melded with lemon rind and sea spray: clean, salty, with genuine power beneath the precision.

Whites are fermented and aged in stainless steel tank on indigenous yeasts. Very little sulfur is added at any step in the winemaking process, and wines are bottled unfiltered. This isn't manipulated wine. It's just honest, old-vine wine from one of Burgundy's most undervalued corners.
