As you might imagine, there are very, very few wines of such elite caliber that don’t also cost a small fortune. Fortunately for us all, Raúl Pérez’ “Las Gundiñas” is one of the shockingly fair-priced few. Each sip communicates so much electricity and density of data, making it a no-brainer as a grail for immediate enjoyment or as a tantalizing cellar magnet for years to come. \u003c\/p\u003e\u003cbr\u003e\u003cp\u003eMany years ago, there was a serious buzz about Raúl Pérez becoming “the next big thing” in Spanish wine. He was a clean-cut, English-speaking go-getter with a Midas touch in the cellar, earning monikers like “The Wizard” and an endless deluge of flattering press and superlatives from wine industry tastemakers. Pérez’s fragrant, detailed, elegant reds appealed to French-obsessed palates and the always-fair prices belied always-extraordinary quality. Pérez more or less put the Spanish growing region of Bierzo on the map, and he is credited with teaching the men behind neighboring Ribeira Sacra’s two most well-known estates, Guímaro and Algueira, how to make wine. So, it’s not unfair to say that the borderland area spanning Galicia and Castilla y Léon—arguably the “hottest” winemaking region in Spain today—would not be what it is without Pérez’s talent and tenacity in those early days. As his star has continued to rise, he’s taken on scores of different projects, including collaborations with fellow winemakers all over the world—the Graillot family of the Northern Rhône; Eben Sadie of South Africa; and Dirk Niepoort in Portugal.\u003c\/p\u003e\u003cbr\u003e\u003cp\u003eIn recent years, much attention and praise has been given to Pérez’ two most famous and high-priced Spanish reds, “La Penitencia” and “El Pecado.” That said, I feel strongly that today’s “Las Gundiñas” deserves mention in the same elite class—if not at the pinnacle of Pérez’s vast and globally revered lineup. Planted in 1910, Las Gundiñas is a celebrated Bierzo site planted to 2.2 hectares of low-density vines that watch over Raúl’s home village at an altitude of 1600 feet. One might assume this bottling to be “100% Mencia” but the truth is far more compelling: In addition to centenarian Mencía vines, pockets of Bastardo (a.k.a. Trousseau in the Jura) dot the vineyard, as well as Alicante Bouschet and Doña Blanca. It is a true field blend, and a living testament to the broad variety of grape cuttings brought here by monks and missionaries who walked the nearby Camino del Santiago in centuries past. \u003c\/p\u003e\u003cbr\u003e\u003cp\u003eGrapes are harvested by hand and fermented, with whole clusters intact, in large oak vats. Maceration lasts for 1-2 months (an eternity by the standard of most peers in Castilla y León) before the wine goes into hibernation for a year in used 225-liter French barrels. It is bottled without fining or filtration and allowed to rest for another 6-12 months before release.\u003c\/p\u003e\u003cbr\u003e\u003cp\u003eAfter the touch of struck-flint reduction blows away, the purest aromatics known to Bierzo roll out of the glass with an air of sophistication: ripe plum and cherries, thyme, huckleberry, crushed black rock, black pepper, freshly turned earth. The palate is just over medium-bodied and generously polished with glossy tannins that allow the wine to glide into a long finish. As we’ve said before, Pérez’s top wines have always targeted the “venn diagram” where Loire, Northern Rhône, and Southern Burgundy reds overlap. It’s a joyous occasion when you get to experience all of these characteristics in one glass! For drinking today, please decant at 55-60 degrees and serve in large Burgundy stems, preferably alongside a rustic dish like braised rabbit or lamb shoulder chops. Time to stock up.\u003c\/span\u003e\u003cb\u003e\u003c\/b\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eThe Sastres go back at many generations in their village of La Horra: Jesús’s grandfather was one of the founding members of a local winemaking cooperative, and his father, Rafael, founded the family winery in 1992 (before they started their own label, the family sold fruit to Vega Sicilia, which is just 25 miles down the road). Jesús Sastre and his brother, Pedro, worked side-by-side until Pedro was killed in a car wreck in 2002, leaving Jesús in charge of the estates 47 hectares of vineyards in La Horra and nearby Roa. Although he has not sought official certification, Sastre has farmed organically and biodynamically since Viña Sastre’s creation; he’s sitting on a treasure trove of old, bush-trained vines that are essentially family heirlooms, including a few prize parcels of vines that were all planted in 1964 (yup, 60 years old this year!) on the classic soils of clay and limestone that make the best wines of La Horra, and Ribera del Duero writ large.\u003c\/span\u003e\u003cb\u003e\u003c\/b\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eOne of the big markers sommeliers look for when attempting to identify Tempranillo wines “blind” is evidence that the wine aged in American oak barrels, which tend to impart notes of coconut and dill to the wine (especially when new barrels are used). Overall, a lot of the discussion about Ribera del Duero (and Rioja too of course) is focused on oak, which I think is unfortunate: Not only have a lot of producers opted to load their wines up with new oak, but the specialness of the Ribera del Duero terroir is being overlooked. While the Sastre “Reserva” has plenty of oak aging–both American and French–it’s the magical combination of richness and finesse that had us re-assessing this region. This is the home of Vega Sicilia, after all, which this wine pays homage to with its crushed-velvet texture and saturated fruit.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eCrafted from 100% Tempranillo (called Tinto Fino or Tinta del País in Ribera del Duero), today’s Reserva was aged for 14 months in a combination of French and American barrels ranging in size from 225 liters to 1,000. It has a dark ruby-garnet hue in the glass, with a broad range of aromas that emerge as the wine takes on air: scents of black currant, kirsch, cassis, anise, lavender, tobacco, mocha, espresso grounds, and baking spices carry over to the full-bodied palate, which has a very compact, focused feel. The time in oak is still evident but it is beginning to integrate in a wine that still has a good 15-20 years of delicious evolution ahead of it. I can’t stress enough how balanced and elegant this wine is, it is the perfect re-introduction to a region that may have lost its way for a bit, but is now turning to people like Jesús for a welcomed course correction! Decant it at least 60 minutes before serving (while still young) in Bordeaux stems at 60 degrees, and don’t be shy with the pairing: beef, lamb, or gamier meats like venison are all in play. Their textures are more in line with cru Red Burgundy meets the mineral and meaty depth of a Syrah from the Northern Rhone Valley. César is among the front line of Spanish winemakers who are determined to reconnect with this ancient land and vines through organic farming, site-specificity, and minimal cellar intervention. \u003c\/p\u003e\n\u003cp\u003eAlthough comprised predominantly of Mencía, César also leans on small amounts of Alicante Bouschet and other unnamed red and white varieties culled from ancient, field-blended vineyards. The palate is loaded with supple yet crunchy berry fruit and perfectly framed with thirst-quenching acidity and polished tannins that accentuate the lively mineral core. Exotic spices and savory undertones also flood out on the mid-palate, further enhancing the depth of this Mencía and taking it into world-best value territory.
